Hmmm, canonical shows the originality of the content, 301 redirect redirects one url to another.

If you have identical content on two website then you can use cononical tag. If you have again two website, one is good and other you just created new one with more improvement. Then you can redirect your old url to new one. This will transfer your backlinks, traffic and authority.

In canonical two URLs are live in your website but Google considers only the canonical URL to remove the duplication but 301 redirection, one URL will be redirected to the second URL and pass all the credits to the second URL.

Bounce rate is the fraction of people who landed on a page and immediately left. Bounces are always one page sessions.
Exit rate is the proportion of people who left your site from that page. Exits may have viewed more than one page in a session.

301 redirects your web page to a new location.
Canonical tag minimizes crawling errors and prevent duplicate contents.

Since the definitions have already been given, when is it best to use each command?Well,a canonical tag is better suited for cases where you only want the search engine(s) to index ONE URL address, but still allow users access to variations of the address.A 301 redirect,on the other hand, works best when you happen to move page content from one location to another-both the search engine and users will be sent to that new location.Or when you have multiple versions of the same page and only want the search engines and users to see that one version.

for example you add canonical tag with this url mycompany.com/index.php this tell search engine that url is same with this url mycompany.com while 301 is permanent redirect to another url for example whe you type this url mycompany.com/index.php you will notice that it redirects you to this url mycompany.com
