Default SEO Home Page Copy

I'm in the process of researching my competition as I develop my own website. I've read here a lot about SEO copy and how it has to be readable as well as functional. But I have noticed that some of my competitors simply have graphics, a few photos of the things they sell and just lists of the products or product categories on their site. They basically seem to be lists of keyword phrases related to each product.

The sites look nice and rank well in most of the searches I conducted.

Is this a useful, valid or recommended SEO approach? (or is it just "coincidence" that they placed so highly in my search? The market is rather "niche-y".)

imo not just coincidence, but also maybe not the factors you are attributing the rankings to. To some extent, good menu navigation incorporating keywords based on categories and products listed out is seo and user friendly ... but other factors such as who links to the site also impact rankings. Its not one factor, but all.

It is important to have content on your homepage. It is best if it describes all that you have to offer (and links to).

The reason your competition can have images on the homepage and rank well is that they probably have a lot more incoming links. Check with 'linkdomain:domain.com -site:domain.com' at Yahoo.

As Logan said, having keywords in categories and having a crawlable site might help, but the relevant, quality incoming links and relevant content are the main driving powers that rule SERPs at the moment
