What is the difference in real terms/SEO terms between one of these and one of the myriad of web listing directories that have a link, a line of text and maybe 5 tags. They seem pretty pointless to me as much as these FFAs.

Obviously, it depends on the directory. Some directories are very useful such as Yahoo's directory
. They provide useful information and have a purpose. They link to legitimate companies that provide a legitimate service. That being said, I agree with you. Many directories are useless. They serve no real purpose, other than to make money by charging for listings.
However, the main difference between FFA pages and directories is, all FFA pages are useless. The companies they link to are all, for the most part, scams.
